Friday food day!

Apparently, not everybody reads the fine print on my blogs or they would know that I INVITED EVERYONE to join in the Friday Food day! Please. And I am NOT a food snob. I don't have Harvey blood, so maybe that comment was not directed toward me.

ahem. And now, even though it's really Thursday night, here's my Friday recipe

Potato soup

6 medium russet potatoes pealed and diced

¼ cup Diced onion or 2-3 green onions

1 cup chicken broth

*white sauce:
3 Tbs. Butter or margarine
3 Tbs. Flour
½ tsp. Salt
pepper to taste
2 cups milk

¼ -1/2 cups swiss cheese

Put the diced potatoes and diced onion in the chicken broth then add enough water to cover them. Cook until they feel tender when poked with a fork. If you want your soup with chunks, strain a few potato chunks out and reserve until later.

*While the potatoes are cooking, make the white sauce in another pan. Melt the butter over medium heat, then add the flour,salt and pepper and whisk until smooth. Gradually add the milk and continue whisking until it is smooth. Stir with a wooden spoon until the mixture thickens and boils. Remove from heat.

Drain the potatoes over a bowl or other container to catch the liquid.
Mash the potatoes and onions.
Add the white sauce to the mashed potatoes. Stir in enough of the reserved broth until the soup is at your desired thickness/thinness. (Add milk if you want it even thinner.)
Add the swiss cheese and return the soup to the stove. Cook on low until the cheese melts. Do not boil.
Add the potato chunks and more salt and pepper if needed.


Youtube is great

When Elle practices piano sometimes, she get so frustrated, she throws herself down onto the keyboard just like that guy on Sesame Street. I tried to describe him to her, then tonight I thought, "Hey, I bet I can find him on Youtube!" and sure enough, there he was! I had to use wikipedia to find his name first. I wasn't sure he even had one.

Yea!!

ALL IS WELL!! ALL IS WELL!!

On Saturday, Elle ate three full meals for the first time in two weeks! Yea for the pink stuff! (which does NOT taste like bubble-gum despite what the enthusiastic pharmacist said "Oh I LOVED this stuff as a kid!" Elle says it's not as bad as her regular medicine BUT it's still not good)

Elle went to church yesterday (she cried for the first 1/2 hour of primary though)
And she went to school today! (she cried all the way there too. If you'd missed ten days of school, and then had to go back, you might cry too :)

Thanks for all your concern and prayers.
If you know a good pediatrician on the west side, let me know.
Since we all know her doctor's office is lame.

Diagnosis & Friday recipe

And the diagnosis is. . .
Bladder infection. Ya. She has all the symptoms of influenza, but the mucus test (which involved a q-tip and Elle's nose) was negative. Her UA was positive, so now we have a big ol' bottle of pink liquid antibiotic.
I asked the pharmacist if the stuff would help flu-like symptoms and she said yes.

And now for the recipe.
Chris' sister said we should do Friday recipe day on our blogs, and I INVITE YOU ALL TO DO THE SAME!
It just so happens that I enhanced a cookie recipe today:

Peanut butter cookies (with some embellishments by me)
1/2 cup margarine
1/2 c peanut butter
1/2 c sugar
1/2 cup brown sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1 egg
1/2 tsp. vanilla
1 1/4 cups flour
1 cup oatmeal
1/2 cup coconut
1/2 cup semi sweet chocolate chips
Bake at 375 for 8-10 min. Yum!

Satus report


This Mr. Potato Head is looking fine, but my little potato head is not doing so well.
Elle's fever is back in full force!
Sunday at 5pm it was 104.1.
Elle said, "I don't feel happy, Mom." Broke my heart :(
Last night it spiked up from 102 to 104.9 in one hour.
I called her pediatrician for the third time, and they
FINALLY
decided she has been sick long enough for an appointment.
She feels great when she's on Motrin. In fact, she put this together today.
Take a careful look at Mr. Potato Head's ears :)
Doesn't he look nice next to my Valentine flowers?!

Sunday dress and hair 2-17-08


Here's what Elle wore today and how her hair was fixed.
She didn't wear this to church. She's sick again/still.
Last night she went to bed with a 101.2 fever and today it's holding steady (without med) at 100.1
Poor little thing.
Friday she was begging me to go on a bike ride with her.
